Is there some way to update the nVidia drivers on a Mac that Apple doesn't want users to know about (for compatibility reasons, I'm sure)?

I wish there were.. but apple builds and maintains the drivers themselves.. and DOESN'T keep them as up to date as their windows and linux counterparts.. I'm actually working on getting the nvidia 7300 series drivers in Leopard updated through them as they are severely broken for Amnesia. (they run about 1/3rd the speed in leopard as it does in linux.. and on the SAME physical card/hardware).

I'll test your saved game file this evening and get back with you.
